A creamy, rich peanut butter mousse that’s high in protein, low in effort.
Serves 4.
Ingredients
Peanut Butter Mousse Layer
- 1 cup Greek yogurt
- 2 scoops Welle Essentials Premium Natural Protein in Vanilla
- 2 tbsp peanut butter powder (or use natural peanut butter)
- 1 tbsp gelatin powder (+ 2 tbsp boiling water)
- 2 tbsp sugar or natural sweetener of choice (adjust to taste)
Choc Ganache Layer
- 80g dark chocolate
- ¼ cup canned coconut milk
Method
- In a small bowl, sprinkle gelatin powder over 2 tbsp boiling water. Whisk immediately to dissolve. Let sit for 2 mins.
- In a blender, combine Greek yogurt, protein powder, PB powder, sweetener and bloomed gelatin. Blend until smooth and creamy.
- Divide the mousse into 4 ramekins or jars. Cover and refrigerate for at least 1-2 hours to set.
- Melt dark chocolate in a microwave-safe bowl in 30-second increments, stirring after each session.
- Stir melted chocolate and coconut milk together until glossy and smooth.
- Pour the ganache over the chilled peanut butter mousse. Return to fridge for another hour to set.
